Ms. Billie's Favorite Recipie

Billie's Hawaiian Chicken Salad



HOME

6 skinless chicken breast (or dark meat if you like)                  
4 Tlbs. chicken bouillon                                                          1 cup mayonnaise (more or less 
1 large onion                                                                             depending on how moist you
1 teaspoon salt                                                                           like yours)
1/4 teaspoon pepper                                                               1/4 cup of curry powder, or less
1 cup chopped celery (not fine)                                               I mix the curry & mayo together
1 large can of pineapple tidbits,                                                    a little at a time & taste it before
   well-drained                                                                             I put it on the salad and toss well. 
1 cup seedless red grapes cut in half
1 cup seedless green grapes cut in half
1/2 cup celery chopped fine

Cover chicken with water, add 4 Tlbs of chicken bouillon, onions, salt, pepper, the 1 cup of coarsely chopped celery; boil or cook in pressure cooker until tender. Cool chicken in the broth. Cut chicken into bite-size pieces, discarding all skin and gristle. Add the 1/2 cup finely chopped celery, pineapple tidbits, and both kinds of grapes.  You might like fewer or more grapes.  Some folks leave them out.
