Ms. Billie's Favorite Recipie

 My favorite Pimiento Cheese

Drain a 4oz. jar of sliced or chopped pimiento.
 
While it drains: 
 
Grate or shred in food processor 1 lb. pkg. of mild cheddar cheese +1 8 oz. pkg. medium or sharp cheddar. It grates better if you do it while the cheese is still cold.
 
Let it stand at room temp. until it will work well.  Don't use pre grated cheese because it is so dry it will not blend well. 
 
Blend in about 3/4 cup of Mayo (not salad dressing) into cheese along with about 1/2 tsp. of celery salt and 1 Tlbs. of  Worcestershire sauce.
 
I add my Mayo a few Tlbs. at a time to get the consistency we like,  if you like it real moist add more.
 
If you like yours real lumpy and coarse mix with a fork until well blended; if you like it creamier use a hand mixer to blend but take care you don't over mix or it will be mushy.
